Wes has had some really awesome nurses since he has been in the special care nursery. Tonight, my mom brought some pumpkin bars for them to say thank you for all that they have done for Wes and for us. They asked for the recipe, so I'm blogging it for them!
Pumpkin Bars
4 eggs
1 2/3 cup sugar
1 cup oil
1 (16 oz) can pumpkin
2 cups flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Cream Cheese frosting
Beat eggs, sugar, oil and pumpkin until light & fluffy. Mix
flour, baking powder, cinnamon, salt and baking soda. Add
to pumpkin mixture, blending thoroughly. Spread batter in
ungreased 15”x10” pan. Bake at 350 for 25-30 minutes.
For muffins, bake 20 minutes, makes 24.
When cool frost with Cream Cheese frosting:
1 3oz pkg cream cheese, softened
½ cup butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar
Combine cream cheese and butter; cream well. Stir in
vanilla. Add powdered sugar, beating until mixture is smooth.
